Asparagus Soup(4 servings)
1 can (16 ounces) cut asparagus
1 can chicken broth
2 tablespoons minced onion flakes
½ cup evaporated skim milk
2 tablespoons chopped fresh parsley
2 drops of EZ-Sweetz
A few freshly ground pepper
In medium-size saucepan, combine asparagus with liquid, broth, and onion flakes. Simmer about 5 minutes. Stir in remaining ingredients. Heat but do not boil.
Crunchy Potato Salad
1-1/2 pounds skinned potatoes
1 cup chopped celery
1/2 cup chopped green bell pepper
1/2 cup julienne-cut radishes (approximately 6 radishes)
1/2 cup chopped red onion
2 large hard-cooked egg whites, chopped
1/2 cup nonfat sour cream
2 cups reduced-calorie mayonnaise
3 tablespoons red wine vinegar
1 tablespoon Butter Buds Sprinkles
4 drops EZ-Sweetz
3/4 teaspoon celery seed
1/2 teaspoon dry mustard
1/4 teaspoon each: salt and freshly ground pepper
1. Cook the potatoes in a pot of boiling water until tender, then cut into chunks and transfer to a bowl. Add the celery, bell pepper, radishes, onion and egg whites.
2. In a small bowl, combine the remaining ingredients; add to the potato mixture and toss until blended.
3. Cover and refrigerate until chill for the flavors to blend. Stir well before serving. Makes 6 cups.
Yogurt Salad Dressing
2 cups plain low-fat yogurt
3 tablespoons Dijon-style mustard
3 tablespoons lime juice
3 tablespoons minced fresh parsley
2 scallions, minced
10 drops EZ-Sweetz
1 teaspoon grated orange rind
In medium-size bowl, mix all ingredients together.
Serve over lettuce or favorite salad.
Teriyaki Sauce
¼ cup soy sauce
2 tablespoons cornstarch
1 cup beef-flavored bouillon
1 cup unsweetened pineapple juice
¼ cup sherry
1 large clove garlic, minced
1 teaspoon minced fresh ginger (optional)
8 drops EZ-Sweetz
In saucepan, mix soy sauce and cornstarch. Add remaining ingredients. Bring to a boil and stir until thickened. Serve with meat or poultry.
Yogurt Fruit Salad(6 servings)
1 container (8 ounces) plain low-fat yogurt
6 drops EZ-Sweetz
1 tablespoon lemon juice
3 oranges, peeled and sectioned
1 medium-size red Delicious apple, diced
2 medium-sized bananas, peeled and sliced
½ cup chopped pecans
In large bowl, mix yogurt, EZ-Sweetz, and lemon juice. Add fruit and pecans, tossing to coat thoroughly. Chill.
Breakfast Shake
1/2 cup low-fat vanilla yogurt
1/4 cup skim milk
2 tablespoons frozen orange juice concentrate
1 tablespoon wheat germ
4 drops EZ-Sweetz
1/2 teaspoon vanilla extract
3 ice cubes
1. In a blender at medium speed, blend all the ingredients until smooth and frothy. Pour into a glass. Makes 1-1/2 cups or 1 serving.
Chilled Apple Oatmeal(Makes 2 servings)
cup oats (quick or old fashioned)
1/2 cup low-fat milk
1/2 cup plain non-fat yogurt
1/4 cup unsweetened applesauce
1 teaspoon coarsely chopped almonds
1 teaspoon pumpkin seeds (optional)
1 drop EZ-Sweetz
Pinch each ground cinnamon and ground nutmeg
Combine all ingredients in a cereal bowl. Stir well, cover with plastic wrap and refrigerate overnight. Serve chilled.
Makes 2 servings
Vanilla Milkshake(1 serving)
1/3 cup instant non-fat dry milk
1 cup ice water
4 drops EZ-Sweetz
1 teaspoon vanilla
Combine all ingredients in blender. Cover and process at high speed about 30 seconds, or until frothy.
Coffee Frost (1 serving)
1/3 cup instant non-fat dry milk
1 cup strong black coffee, chilled
4 drops EZ-Sweetz
Dash cinnamon
Combine all ingredients in blender container. Cover and process at high speed about 30 seconds, or until light and frothy. Serve over cracked ice.
